I was in the mood for a wonderful  Mexican lunch and so me and my sister stopped in for a bite at Cantina Laredo at Penn Square Mall.  I have always enjoyed their unique salsa, fresh chips and homemade guacamole which they prepare table-side with fresh tomatos, jalapenos, red onions and cilantra.

During this visit I sampled the Pomegranate Margarita, a plate filled with

a tamale, rice and beans and a cheese enchilada. But my personal favorite was the Enchilada Veracruz, a blend of stuffed chicken, Monterrey jack cheese and spinach topped with vinaigrette marinated veggies, queso fresco and tomatillo sauce.  It was yummy and light.
