Ingredients:<\/strong><\/p>\n

4 c. sifted all-purpose flour
\n2 tsp. baking powder
\n1\/2 tsp. soda
\n1\/2 tsp. salt
\n2\/3 c. butter
\n1 1\/4 c. sugar
\n1\/4 c. light molasses
\n2 eggs
\n1 tbsp. grated lemon peel<\/p>\n

Directions: \u00a0<\/strong><\/p>\n

Sift together flour, baking powder, soda, salt and mace. In a large mixing bowl, cream butter and sugar. Add molasses. Add eggs and lemon peel, beat well then beat in flour gradually. Divide dough into 2 parts; wrap each piece in plastic wrap \u00a0and chill for 4 hours or overnight.<\/p>\n

On a floured board, roll out dough, one piece at a time to 1\/8 inch thickness. Cut out shamrock pattern with cookie cutter.<\/p>\n

Bake on greased sheet pan at 400 degrees for 6-8 minutes or until slightly browned.<\/p>\n

When cool, frost with the Green Frosting:<\/p>\n

Frosting<\/strong><\/p>\n

Ingredients:<\/strong><\/p>\n

2 egg whites
\n2 c. sifted confectioners’ sugar
\nGreen food coloring<\/p>\n

Directions:<\/strong><\/p>\n

In a small bowl, beat \u00a0egg whites and sugar for 10 minutes or until very stiff. \u00a0Tint frosting with green food coloring. \u00a0Frost cookies.<\/p>\n
