I was in the mood for a wonderful \u00a0Mexican lunch\u00a0and so\u00a0me and my sister stopped in for a bite at Cantina Laredo at Penn Square Mall.\u00a0 I have always enjoyed their unique salsa, fresh chips and homemade guacamole which they prepare table-side with fresh tomatos, jalapenos, red onions and cilantra.<\/p>\n
During this visit I sampled the Pomegranate Margarita, a plate filled with<\/p>\n
a\u00a0tamale, rice and beans and a\u00a0cheese enchilada. But my personal favorite was\u00a0the Enchilada Veracruz, a blend of stuffed chicken, Monterrey jack cheese and spinach topped with vinaigrette marinated veggies,\u00a0queso fresco and\u00a0tomatillo sauce.\u00a0 It was yummy and light.<\/p>\n
