When I’m traveling and trying to count calories I usually select Eggs\u00a0Benedict from the menu.\u00a0I ask the server to put the sauce on the side which leaves me with a\u00a0poached egg, Canadian bacon and an English muffin.\u00a0I usually just eat one egg and share the other one with my hubby.<\/p>\n
Tip:\u00a0When you keep the sauce on the side and dip your fork into the sauce and then take a bite you forgo a huge amount of\u00a0calories from the rich buttery\u00a0sauce.<\/p>\n

Here’s my recipe:<\/p>\n
Ingredients
\n8 \u00a0eggs (poached)
\n4 Wolferman’s English muffins\u00a0(split and toasted)
\nHollandaise sauce\u00a0 (recipe below or buy a packaged mix)
\n1 package of Canadian bacon<\/p>\n
Heat the Canadian bacon in a pan\u00a0with a tablesoon of\u00a0butter
\nplace the Canadian bacon on top of the muffin,\u00a0then pour sauce over the egg as desired.<\/p>\n
Hollandaise Sauce – Although I have made the sauce from scratch in the past, \u00a0I usually just buy a dry packet from the
\ngrocery store and add butter and water so I don’t have to worry about salmonella.<\/p>\n
