When I’m traveling and trying to count calories I usually select Eggs Benedict from the menu. I ask the server to put the sauce on the side which leaves me with a poached egg, Canadian bacon and an English muffin. I usually just eat one egg and share the other one with my hubby.

Tip: When you keep the sauce on the side and dip your fork into the sauce and then take a bite you forgo a huge amount of calories from the rich buttery sauce.

Here’s my recipe:

Ingredients
8  eggs (poached)
4 Wolferman’s English muffins (split and toasted)
Hollandaise sauce  (recipe below or buy a packaged mix)
1 package of Canadian bacon

Heat the Canadian bacon in a pan with a tablesoon of butter
place the Canadian bacon on top of the muffin, then pour sauce over the egg as desired.

Hollandaise Sauce – Although I have made the sauce from scratch in the past,  I usually just buy a dry packet from the
grocery store and add butter and water so I don’t have to worry about salmonella.
